Almost all of leu-OC ?? were in- corporated onto the C-terminal of α?? chain in phosphorylated pig skin collagen ( PPSC ). The final product PPCS-leu-OC ?? had excellent functionalities and was suitable for use as a low-fat content proteinaceous surfactant. The computed cost of materials for manufacturing of one kg of PPSC-leu- OC ?? from pig skin was about NT$ 356, but if the consumptions of papain and leu-OC ?? were adjusted to half and to 2/3 of original amount, respectively, and with the increased the reaction time to 90min, the cost might reduced another 25 %.
