國人的飲食習慣,隨著經濟的成長以及飲食生活的改變,罹患肥胖、高脂血症、心臟病、過敏性氣喘、肝炎及大腸癌等人口急遽上升。本研究鎖定在種子與果實類食材之加工利用,中國傳統中草藥材中不乏種子或果實類藥材,含有多種功效成份,對醫療保健有其重要之角色,然而種子類藥材由於成份不易抽提萃取,自古,對種子類藥材之炮制方法,是為了增加種子內成份有效利用,進一步去除種子中對腸胃道刺激或破壞毒性成份的重要方法,種子類的炮制以炒制為主,在炒制過程中,有炒黃、炒爆、碳化等。是否經由現代化的種子膨發技術,將傳統種子類藥材或食材,以新技術加工,有利於功效成份之提取,並可提高生物活性,降低毒副作用。本計畫以充氮膨發暨超音波萃取的技術進行加工,將種子類食材的成份加以分離萃取,增加或優化各成份分層,提高水溶性多醣成份的釋出,而多醣成份則應用於免疫調節與輔助調整過敏體質之保健功效;如利用酒精為萃取溶媒,則應用於護肝與不易形成體脂肪之保健功效。本計畫以三年的時間,評估十二種藥食同源之材料,進行過敏免疫調節、護肝及不易形成體脂肪之保健功效評估,希望由此充氮膨發種子暨超音波低溫萃取的方法對於開發新穎功效成份與生物活性有新的發展。 People suffered from obesity, hyperlipidemia, heart disease, allergies, asthma, hepatitis, and rapid population increase in colon cancer were change in eating habits and economic growth in diet. In this study, seed and fruit category are used in the processing and utilization of food. There are many seeds or fruits herbs in traditional Chinese herbal medicine materials. Seed and fruit category contains a variety of medicinal ingredients effects of health care has an important role. However, medicinal seeds not easily extract active ingredients. Since ancient times, the herbal processing method of seeds is to increase the effective use of content in seeds. Remove the seeds for further irritation or damage to the gastrointestinal toxicity of ingredients important ways. Seed processing in the frying process, there are fried puffing and carbonization. Seed and fruit through expansion of modern technology might increased the beneficial effect of composition, and enhance the biological activity, reduced side effects. The study plan to use nitrogen filled puffing and sonicatic extraction techniques for processing, the seeds extracted food ingredients to be separated. Increase or optimize the composition layer to improve the release of water-soluble polysaccharide components and used to modulate allergic effect. The use of alcohol as an extraction solvent, it is applied to study the hepatoprotection and anti-obesity. In this three-year project, we will monitor the twelve materials in the allergic immune regulation; protect the liver and reduced body fat in the health effects assessment. We hope that nitrogen filled puffing and low-temperature sonicatic extraction will be the efficiency in the development of novel composition and biological activity.
