本論文利用數學模型來模擬生米煮成熟飯的過程,當穀米膨脹時,米粒內部會產生兩個移動邊界,把此現象塑造為一維Stefan 問題。我們將針對於卡氏座標下之Stefan問題定義模型的方程式,經由數值方法的演算及實驗找出數值解與其解析解比較。本文還進一步於圓柱座標下,討論穀米膨脹過程中的變化情形。 A mathematical model is presented to simulate the cooking process of the rice in this thesis. When the rice is swelling, there are two moving boundaries which will be produced interior of the rice.This phenomenon is modelled as a one-dimensional Stefan problem.The governing equation of the Stefan problem is derived in Cartesian coordinates, and its semi-analytical solutions is calculated for verification of numerical solutions via numerical experiments. Finally, we extend the system to cylindrical coordinates for discussing process of the swelling grain.
