    Abstract:   本研究旨在探究台灣高等餐旅教育過去15年的成長變化與未來發展。本研究為質性研究,藉由文獻分析法與7位台灣高等餐旅教育相關學者一對一深度訪談以及STEP分析,了解台灣高等餐旅教育過去數量的轉變,並提出12點現在與未來的環境影響因素,包含社會環境因素 (S):高等餐旅教育與未來就業形象的衝突、餐旅教育多元性趨勢、人口結構問題-少子化、國際化趨勢。科技環境因素(T):人工智慧(AI)帶來的好與壞、科技進步,產生新的學習模式、科技發展太快,致使教育跟不上。經濟環境因素(E):餐旅產業經濟持續向上發展、產業低薪問題。政治環境因素(P):政策力道強、高等教育體系混淆、跨部會政策難串聯順暢。許多因素是高等餐旅教育發展的威脅,但若有適當的調整與改變對策,危機將化為轉機。因而本研究依據研究結果提出相關建議,提供高等餐旅教育相關產、官、學發展策略之參考。
    The purpose of this study is to investigate the development of hospitalityhigher education in Taiwan in the last 15 years and to find the way out. This study is a qualitative study, and the research method includes literature analysis, in-depth interviews with 7 Taiwan hospitality higher education related experts, and STEP analysis. Comprehend the quantity change and list 12 points of current and future environmental impact factors: Social factor- conflict between hospitality higher education and future employment image, the diversity trend of hospitality education, lower birth rate, and international trend. Technological factor- the good and the bad of artificial intelligence (AI), technology is reshaping education and improving new learning model, technology is developing too fast and hospitality higher education can’t catch up with it. Economic factor- the hospitality industry continues to growth, the average salaries in the hospitality industry are low. Political factor- great power, confusion of higher education system, cross-departmental regulations are difficult to connect. Many factors are threats to the development of hospitality higher education, but if there are appropriate adjustments and changes, the threats will become turning points. Therefore, based on the research results, this study provide some relevant suggestions to industry- government-university, which can be used as a reference for future development.
